Healthy Sunday Brunch Before Labor Day ~ killing belly fat is murder

IMG_2110Hurricane Hermine left northeast Florida two days ago with only minor damage. However, for those two days it’s been raining. We need the rain, but it’s dreary and the Labor Day weekend is upon us.

So, to cheer myself up I made a healthy and delish brunch dish. Poached eggs on multi-grain waffles (Kashi frozen, in this case), with tomato slices and bacon bits. Sorta an egg on waffle BLT, sans the lettuce. How can you go wrong with bacon and tomato? Or with bacon and eggs for that matter.

Tips:

  • Hormel 1/2 the fat bacon bits are available in most supermarkets. Or, you can always substitute turkey bacon.
  • Make sure tomato slices are room temperature.
